Fruits and vegetables need particular care. During preparation for freezing, handle fruit as little as possible to avoid bruising.
Make sure fruits and vegetables are dry before storing for freezing. Excessive moisture hastens decay.

Vegetables must be blanched before freezing. This deactivates the enzymes found in the vegetable (it's the enzymes in vegetables that cause them to deteriorate), brightens their colour, and preserves their nutritional value whilst frozen.Try this easy method for blanching:
Buy large bags of tomatoes from the grocer, to make sure the left over tomatoes don't go rotten, a trick is to place in boiling water for 30 seconds to loosen the skins, core and peel, then place in a Multix Freezer Bag, label with Multix Adhesive Labels and freeze to use in recipes.
Blanching Method
1. Chop vegetables into even-sized pieces. Place in a colander. Bring a saucepan of water to the boil. Plunge vegetables into water. Bring back to the boil. Cook for 30 seconds to 1 minute.
2. Lift colander from saucepan. Drain vegetables well, shaking.
3. Plunge into a bowl of iced water to 'refresh'. This not only stops the cooking process but helps to retain the colour. When cool, drain again. Arrange on kitchen paper. Vegetables can now be frozen.
